Avocado Shrimp Salad


  • 2 avocados - peeled, pitted, and cubed
  • 1/2 pint grape tomatoes, halved
  • 5oz baby spinach
  • 1 pound cooked salad shrimp
  • 1/2 teaspoon minced garlic
  • 1 pinch salt and pepper to taste
  • 2 tablespoons lime juice
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon honey

How to Make It

Step 1

Prepare the dressing by whisking together lime juice, olive oil, honey, salt and pepper.

Step 2

Stir together avocados, tomatoes, garlic, and shrimp in a large bowl.

Step 3

Arrange a bed of spinach on a plate, top with the shrimp mixture, and drizzle with the dressing.
